I’m back!! Sorry for the long break, but we were in NYC from Sunday through last night. The trip was SO MUCH FUN. I plan to do a recap this weekend! We fit a lot into 2.5 days… though I still have a huge list of things I want to see/do there.
My birthday was on Sunday (37- ugh, how??? I was 26 when I started this blog!). Most of my “gift” was shopping in NYC, but I did pick out this baby:
Air Fryer! I know, I know- another non-essential appliance that I have zero room for. But I kept seeing recipes that sounded amazing and drank the kool-aid. I picked the air fryer up today at Target and tried it out right away. Cut up a head of cauliflower and tossed it with some buffalo wing sauce, a tiny bit of olive oil (not sure if this was necessary since it already had sauce?), garlic powder and onion powder. Then I preheated the air fryer at 400 for 3 minutes. Added the cauliflower and cooked it for 15 minutes at 400, tossing the veggies around halfway through.
It was SO GOOD. Like I basically ate that entire head of cauliflower by myself. It was crisp without being greasy. I love crunchy, browned roasted veggies, but they take a while in the oven, make the house stink and sometimes seem oily. These were perfect!! I dipped them in some Greek yogurt blue cheese dressing.
Next up, I cooked a bag of Trader Joe’s cauliflower gnocchi in the air fryer for dinner. I drizzled them in a little olive oil, then cooked at 400 for 12 minutes (tossing halfway).
Another winner. They were crunchy on the outside and pillowy on the inside. Better than when I cook them on the stove or in the oven. They were a *tad* brown so next time I might just do 10-11 minutes. Also, often the gnocchi are stuck together straight out of the bag, and I’d recommend trying to separate them as much as possible before cooking. The ones that were stuck just kind of cooked together.
Served with Rao’s marinara and chicken meatballs (cooked in my other giant, unnecessary appliance- the Instant Pot). Arugula salad on the side.
Obviously I’m really pumped about my new toy. Apparently when you’re 37, these are the things that excite you. Send any good recipes my way, please!
