That’s What She Said…

Three is the Magic Number June 18, 2008

It’s really hard to believe (because I’m so young, right? RIGHT?) but three years ago today, June 18th, Brian and I were getting ready to head down the aisle! It was a perfect day- the ceremony went down without a hitch, and the reception, though packed, was SO much fun. It was quite the party; we anticipated 300ish guests and ended up with 400! Although we probably broke the fire code many times over and severely stressed out the Belo’s wedding coordinator, it went beautifully! I really wish we could go back and to it all over again (especially after hearing some of the stories afterwards…). So HAPPY ANNIVERSARY, Brian! After over 7 years together I can’t imagine a day without you- and wouldn’t want to, either. I’m the luckiest :)

Although we have hundreds of pictures from the wedding, sadly I don’t have many in electronic format- just those that friends and family have emailed. But here are a few!

At the church:

THE CAKE… I sketched out a picture of this cake probably a year and a half before we actually got married (a little career foreshadowing, perhaps?):

And finally, one of our rare moments together at the reception! We spent so much time talking to guests that, other than dancing and about 5 minutes to eat, we barely hung out. Let that be a lesson to you engaged people- stick with your new spouse at your reception!!

So there it is! When I have more time I’ll type out the story of our engagement, because it is the best engagement story in the history of the world. And I’m not biased at all.

This should probably be a separate post, but I’m lazy and have to get the kids up soon. Last night we were busy in class:

  • Hazelnut Biscotti
  • Spritz Cookies
  • Nut Cookies (kind of like Mexican Wedding Cookies)
  • Cinnamon Cocoa Pinwheels

Plus icing the brownies from yesterday with ganache. I think it was a full moon last night- everyone in my group cut themselves. I have a huge gash in my pinky from my 12″ serrated bread knife… and I wasn’t even using the knife at the time. It was just sitting next to me! Needless to say, I spent the remainder of the class wearing a band-aid and rubber gloves.

I handled the spritz cookies and brownies, and the other two in my group took care of the rest. You’ll have to wait until Monday for the cinnamon cocoa pinwheels- they’re icebox cookies and have to set in the freezer. The spritz cookies were fun… once you get the piping technique down (I’m still working on that), they’re easy.

Next week is bread! And our first quiz. Yikes.

 

No Bakes April 22, 2008

So as you know, we celebrated my Dad’s b-day this weekend… and as I’ve said before I’ll use ANY excuse to exploit my family as my baked good guinea pigs. Apparently my grandmother used to make no-bake cookies when my dad was growing up and he reminisces about them often, so I decided to give her recipe a shot.

Despite being pretty much the easiest recipe ever, the first try was kind of a disaster.  I only had a couple tablespoons of real butter, so I improvised with Smart Balance.  In my defense, I checked the Smart Balance website and it said that the original version is fine for baking…  but since these were NO BAKES (duh), apparently that rule didn’t apply.  That batch didn’t solidify at all. They just ended up as these nasty-looking little piles of chocolate and oats. So into the trash they went- despite Brian’s protests: “But they TASTE fine!”

So after a quick trip to Super T I ended up with about 3 dozen perfect no-bakes. They don’t look very appetizing but trust me, they were delicious!

No Bake Cookies

  • 1/2 C Milk
  • 1/4 C Unsweetened Cocoa Powder
  • 2 C White Sugar
  • 1/2 C Butter (cut into large pieces)
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon (optional)
  • Pinch of Salt
  • 3 C Quick Cooking Oats
  • 1/2 C Peanut Butter (I used Super Chunky)

In a saucepan over medium, combine milk, sugar, cocoa powder and butter. Stir constantly until mixture comes to a boil.  Boil for 1 minutes.  Remove from heat and stir in vanilla, cinnamon, salt, oats and peanut butter.  Drop by spoonfuls onto wax paper.  Let cool for about an hour- or until solid.
