A Little Sunshine

There’s been a consistency in my 2 pregnancies: A constant craving for citrus. Anything sour, really. Does this mean I’m having another boy? Or that I have a vitamin C deficiency? All I know is that I’m downing clementines and grapefruit by the pound, and as soon as I saw this recipe on Pinterest I had to make it immediately. The recipe is actually for a Fresh Strawberry Yogurt Cake, but what had me hooked was the addition of lemon juice and lemon zest.

But if I like strawberry lemonade… I LOVE strawberry limeade. So a few edits, and:

Strawberry Limeade Bundt Cake

Inspired by A Spicy Perspective

For the cake:

  • 2 sticks of unsalted butter, softened
  • 2 cups white sugar
  • 3 eggs
  • 2 Tbs lime juice
  • 1 tsp vanilla extract
  • 2 1/2 cups flour, divided
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 cups flour
  • 1 cup plain, lowfat yogurt
  • 16 oz fresh strawberries, diced
  • zest of 2 limes

For the glaze:

  • 1 cup powdered sugar
  • zest of 2 limes
  • 2 Tbs lime juice

1. Preheat oven to 325 degrees.

2. Grease and flour a 10 inch bundt pan.

3. Using an electric mixer, cream together butter and sugar until fluffy. Add eggs, 1 at a time until mixed. Add vanilla extract and 2 Tbs of lime juice.

4. In a large bowl, sift together flour, baking soda and salt. Add flour mixture to butter mixture, alternating with the yogurt. Mix until just incorporated.

5. Toss strawberries with remaining 1/4 cup of flour. Add strawberries and lime zest to batter and stir until just mixed.

6. Pour mixture into bundt pan and bake for 60 minutes.

7. Remove from oven and allow to cool for 10 minutes. Turn cake over onto wire rack and allow to cool completely.

8. To make the glaze: Whisk together powdered sugar, lime zest and juice. Once cake is cool, pour glaze evenly over cake and allow to set.

YUM. I’m warning you- the glaze is insane. It reminds me a lot of the glaze for Giada’s lemon ricotta cookies that I love so much. I know this is kind of a summery recipe for January, but who doesn’t need a little sunshine in the winter? Sunshine and cake. I know what we’ll be having for breakfast in the morning…
